Ingredients

  • 1 small onion, diced
  • 1 green pepper, diced

Step 1: Add the Onion, Green Pepper and Chorizo

Heat a pan with some oil. Add 1 diced small onion, 1 diced green pepper, and 3 inches of diced chorizo.

Step 2: Make the Filling

Add 1 clove of finely chopped garlic and 1 chopped red chilli. Then add 1 small diced cooked potato. Stir well and once the elements are well combined, add 1 tsp of ground cumin. Leave to cook. Remove the mixture from the hob, add 2 tbsp of grated cheese. Mix well.

Step 3: Prepare the Pastry

Take a sheet of puff pastry. Roll out on a table sprinkled with flour, use a cutter to cut out circles of pastry. Brush the pastry with beaten egg. Pull away any unneeded pastry.

Step 4: Fill and Seal the Empanadas

Fill the pastry circles with your empanada mix. Fold the circles and push the edges of the pastry together to seal. Use the flat end of a knife to press and ensure that the pastry is nicely sealed. Add some forkholes to allow steam to escape during baking.

Step 5: Bake

Add the empanadas to an oiled baking tray. Place in the oven at 190C for about 15-20 minutes or until golden brown.
