Enlarge There's nothing more delicious, or quintessentially English, than a cream tea of scones, jam and cream. Here's how to make the perfect English scone.

Step : You will need

  • 900 g plain flour
  • 60 g caster sugar
  • 3 tsp baking powder
  • 170 g butter
  • 3 eggs
  • 450 ml milk

Preheat the oven to 200 C.

Sieve into a bowl 900 g plain flour with 3 tsp baking powder. Add 56 g of caster sugar and mix.

Break the butter into cubes, add rub into the dry ingredients. Keep going until the mixture is the consistency of bread crumbs.

Whisk 3 eggs together with 450 ml of milk. Gradually stir into the dry ingredients until it comes together as a soft dough.

Turn the dough out onto a lightly floured work surface and knead lightly.

Use a floured rolling pin to roll out to about 2.5cm thick.

Cut out the scones and lay onto a baking sheet lined with grease proof paper. Brush with the left over egg wash and place in oven for 15 minutes.

Serve with jam and cream.

I am from UK, and I found this recipe to be perfect. I made 5 batches and took them to work with clotted cream & jamj, they loved them. I set the oven to 390F and they took about 20 minutes to cook. I used white wholewheat flour, European butter and organic eggs. I added golden raisins to some of them. Great recipe, very nicely demonstrated in the video.

Yes, wonderful instructions, and I finally understand how to mix the dry and wet ingredients properly (no messsy countertop, to spoons stuck to the bottom of the bowl)! And she's cuch a lovely chef, too, don't you think?

These are amazing, they look suberb, and taste better than anything from the shops. I will never buy a shop-scone again, mine are infinitely better. Jam and cream are a must, but you can use the basic, no-frills stuff 'cos these scones make anything taste ace.
