How To Make Extra Crispy Roast Potatoes
- Serves:
- 4
- Preparation Time:
- 15 minutes
- Cooking Time:
- 1 hour 5 minutes
- Total Time:
- 1 hour 20 minutes
- Oven Temperature:
- 220° c - 430° f
Step 1: You will need:
- 1 kg potatoes, peeled and cut to even sizes
- 80 g lard or any other fat
- salt and pepper
- 1 saucepan with lid
- 1 roasting tray
- 1 spoon
Step 2: Preheat the oven
Set the oven to 220ºC (425ºF/ gas mark 7).
Step 3: Parboil the potatoes
Place the potatoes into a saucepan of water. Cover with the pan lid and bring to a simmer. Allow them to cook for roughly 7-10 minutes. As we are par boiling, only their outer layer should be soft.
Step 4: Prepare the roasting tray
While the potatoes are cooking, spoon the lard or fat into the roasting tray, place it into the upper part of the preheated oven and let it heat up. The fat must be very hot in order for the potatoes not to stick to the pan. They'll also turn out a lot crispier and tastier.
Step 5: Drain the potatoes
Remove the pan from the heat and take it to the sink. Using a towel to protect your hands, carefully drain the water from the pot, using the lid to keep the potatoes in place.
Then with the lid still on, shake the potatoes in order to 'roughen them up'. This will help to create a crunchier coat. Finally, remove the lid and season with salt and pepper.
Step 6: Bake
With great care, remove the hot tray from the oven. Carefully spoon each potato into the hot, sizzling fat. Be very careful not to burn yourself! Return the roasting tray to the oven and bake the potatoes for about 45 minutes. Half way through the cooking time, turn them over to ensure they are cooking evenly. Then place back in the oven to crisp on the other side. When they are golden brown, remove them from the oven.
Step 7: Serve
Your extra crispy potatoes are now ready to serve. Sprinkle them with a little more salt and pepper before serving. They make a wonderful accompaniment to a Sunday roast, a chicken dinner or nicely cooked rib-eye steak. They are as versatile as they are tasty. Enjoy!
Tips & Comments
I always put garlic salt on mine{lovely}
Use goose fat for the best results. Also try adding some butter when you shake them, and sprinkle over some mustard flour.
this video is so easy to use. I added a spoonful of curry powder to the water before i added the potatoes. The kids loved it - there were only 2 left over for me!
It looks great....I'll cook on weekends

It's easy! It'll be enjoyable for me though I seldom cook. :D
Great recipe for all those rice eaters;O) It turned out great with a seasoning of salt, pepper and dry parsley... great favourite!!!
For my Muslim friends I always use sunflower oil mixed with a little olive oil. Tastier than plain vege oil.
Nigella adds dry semolina to the par boiled spuds once the water is removed; shakes them around a bit in a small amount of semolina. This makes them very crispy. I awlays use goose fat too. Sometimes I don't bother with the par boiling stage and just roast them from raw, which is just as good when using semolina.
what an excellent site stumbbled upon it by accident....love it thank you
