      <description>&lt;p&gt;I forgot to mention in my comments 2 hours ago that you should boil the potatoes as long as you dare - not as in the recipe.  You want melting soft insides and crispy outsides!  After 12-15 minutes watch them like a hawk until they look and feel like theyre going to break up. It's also a good idea to take the tray with the heated fat out of the oven and put on the hob to keep continuously very hot.  Certainly rough the spuds up by shaking (or forking) - but dry them thoroughly first. Afterwards you can strain off the (hopefully goose) fat and reuse.&lt;/p&gt;</description>

I coat raw potatoes with a generous amount of extra virgin olive oil. I cover my roasting pan with foil tightly. I let it cook for about 10 minutes(or more depending on the size of the pieces) then I remove the foil and increase the heat to make them crispy. 
I add the spices and or herbs in the coating process.
Duck fat is a good substitute for olive oil.
