There are two importent things that i would change to make this Falafel to be less dry: 1- Insded of using a 2 Tbsp of flour, use one pita that was immersed in water for a few minutes. Else, you can just add 2-3 Tbsp of water to the blend. 2- Add half chopped medium onion to the belnd. Almost any falafel i know had an onion inside. It makes the Falafel more light. Also, I personaliy would prefer to use 2 cloves of garlic insted of 3 for this amount of chickpeas, and I would use a baking powder insted of baking soda, as baking soda has an aftertaste.

I usually make falafel with dry fava beans which have to be soaked overnight, its skin peeled and put in the food processor with green coriander, parsley, onion, garlic and a small soaked piece of bread after draining it from water. This is how we Egyptians make falafel.

Falafel (Arabic: ?????? falaafil ), Hebrew: ?????????; also known in Egypt and Sudan as ta'meya, Arabic ?????), is a fried ball or patty made from spiced fava beans and/or chickpeas. It is a popular form of fast food in the Middle East, where it is also served as a mezze (snack or tapas).

The word "falafel" is the plural of the Arabic word ???? (filfil), meaning pepper.[1] Variant spellings in English include felafel and filafil.

Falafel is generally served in pita bread, either inside the pita, which acts as a pocket, or wrapped in a flat pita. In many countries, falafel is a popular street food or fast food. The falafel balls, whole or crushed, may be topped with salads, pickled vegetables and hot sauce, and drizzled with techina (tahini). Falafel balls may also be eaten alone as a snack or served as part of a mezze. During Ramadan, they are sometimes eaten as part of an iftar, the meal which breaks the daily fast after sunset.

Falafel has been part of the diet of Mizrahi Jews for centuries and is a staple of the Israeli diet. It has become the national dish of Israel.[2]

Falafel is now popular as a street food in countries around the world. Sometime it is offered as a vegetarian alternative to Döner kebab.

I know falafel with lemon juice added instead of water....

And - yes, there's a lot of seasoning, also salt, needed. The chickpeas are very absorbing. I'm not sure if 1.5 tbsp. is too much, I guess 1.5 tsp. should be enough. (I season it rather by guess...) You should taste it: if the raw dough tastes almost a tinytinytiny bit too salty it's just right.

If the dough is rather soft, you can portion it quick and easily with a piping bag without the nozzle.
