How To Make Field Mushrooms On Toast

Step 1: You will need
- 900 g flat cap mushrooms, washed and stalks removed
- 120 ml olive oil
- 4 slices of crusty bread, not pre-sliced
- 2 large cloves garlic, peeled and chopped
- 2 tbsp chopped flat leaf parsley
- salt and pepper (to taste)
- 1 baking tray
- 1 basting brush
- 1 ridged grill pan
- 1 chopping board
- 1 knife
- 1 frying pan
Step 2: Preheat the oven
Set the temperature of the oven to 150ºC, gas mark 2.
Step 3: Prepare the mushrooms
Put the mushrooms stalk side up on the baking tray, brush generously with olive oil and season with salt and pepper.
Step 4: Cook the mushrooms
Place them in the oven and cook slowly for approximately 10 minutes. Keep checking - they are ready when the undersides are very dark. Remove and allow to cool.
Step 5: Preheat the grill pan
Place the grill pan over a medium to high heat.
Step 6: Grill the bread
Brush oil onto both sides of the bread. Grill each piece for 10 seconds each side.
Step 7: Cut the mushrooms
Chop the mushrooms into one and a half inch (2.2cms) slices.
Step 8: Fry the garlic
Heat the frying pan to a moderate heat and add 3 tablespoons of olive oil. Add the chopped garlic and sauté briefly for approximately 30 seconds, until soft but not coloured.
Add the cooled mushrooms and stir and toss until hot then add the parsley.
Step 9: Serve
Top the toast with the mushrooms and serve.
