How To Make Filo Turnovers

Step 2: Prepare the mushroom filling
Heat the frying pan over a high temperature and when hot add the butter followed by the mushrooms. Stir them around to coat them in the butter and season with salt and pepper. Sweat the mushrooms for about 4 minutes, stirring avoid burning.
Next, add the shallots and mix together. Then add the thyme and parsley and finally spoon it all into a bowl and leave to cool down.
Step 3: Prepare the shrimp filling
Wipe the frying pan clean and place it back on a medium heat. Add the butter, shrimps, garlic, spinach, curry powder and paprika. Season with salt and pepper and add the cream and stir well. Add the flour, turn the heat off and mix.

Spoon the mixture into a bowl and set aside after it is taken off the heat.
Step 4: Preheat the oven
Set the temperature of the oven at 200ºC.
Step 5: Finish the mushroom filling
When cool, spoon the crème fraiche into the bowl with the mushroom mixture and stir well.

While preparing the filo, make sure you keep the sheets you're not using covered with a damp tea towel to prevent them from drying out.
Step 6: Prepare half the filo pastry
Take 1 sheet of filo and brush it with the melted butter. Lay another sheet on top and coat it with butter and then repeat with the third sheet. Cutting lengthwise, remove a little from the top of the pastry. Turn it over and vertically slice 5cm strips.
Step 7: Make the shrimp turnovers
Place a spoonful of shrimp filling at the bottom of each strip. Starting from the left, fold the filo sheets across the mixture into a triangle, then across again to the other side and so on until you form a tightly closed triangular parcel.
Step 8: Prepare the remaining pastry sheets
Repeat as we did in step six with the previous sheets of filo.
Step 9: Make the mushroom turnovers
The process here is exactly the same as with the prawn filling. Follow the same instructions to make triangular parcels. When you finish all the turnovers, transfer them to the baking tray ready to go in the oven.
Step 10: Cook the turnovers
Place the baking tray in the centre of the oven and cook for 15 minutes. When golden brown and crispy, remove the turnovers from the oven and leave them to cool down.
Step 11: Serve
Serve as a canapé with a sprinkling of fresh herbs if desired. These turnovers can be made with a wide variety of fillings from mixed cheeses to potatoes.
