Step 1: You will need

  • 25 g Coffee beans / ground coffee
  • ½ ltr Water
  • Milk
  • Sugar
  • 1 cup
  • 1 spoon
  • 1 coffee filter
  • 1 filter cone

Step 2: Boil the water

By the time we add it to the coffee it will need to be just off the boil, so let it stand cooling for 3 minutes after reaching its hottest point.

Step 3: Grind the beans

Take 25 grams of coffee beans and grind in a machine. If you don't have a coffee grinder, just buy ready ground beans.

The ground coffee beans go straight into the filter and then to the filter cone, which should be positioned either just above or directly on top of your cup.

Step 4: Pre-saturate

Here in the shop, water is kept at the right temperature so they don't need to pre-boil a kettle.

To get the ground coffee filtering properly, pour in only a small amount of water to begin with: this is pre-saturation.

Leave it to soak through for about 10 seconds. It wets the grounds all the way to the bottom of the filter which means there'll be no blockages afterwards.

Step 5: Pour in water

Pour in a circular motion to cover all the grounds, until the filter's full. Then wait a while and let it drain through.

Top it up as many times as you need to in order to fill the cup.

When the cup's full, stop pouring and remove it from the filter cone. You should use a new filter and coffee grounds every time you make a new cup, so throw the old one away.

Step 6: Milk and sugar

Add milk and sugar to taste.

    I love Monmouth coffee - I go to the one in Covent Garden but they also have a stall at Borough Market where you can buy beans etc- delicious coffee!!
