How To Make Flour Tortillas

In this video chef Matt from the Underground Cookery School shows you how to make authentic Mexican tortillas.

Ingredients

  • 300 g flour
  • 4 baking powder
  • 1 1/2 tsp salt
  • 1 cups (250ml) lard
  • 300 ml water

Method

Mix the flour, salt, baking powder and lard in a mixing bowl. Rub this mixture together with your fingers until it looks like bread crumbs. This should take 2-3 minutes.

Next add the water a little at a time kneading after each addition. It should end up looking like firm dough. Leave to rest for 20 minutes.

Cut the dough into 16ths. Take one of these pieces and roll it on a floured surface into a circle. You can put a plate on top and cut around it to make it neater.

Put the tortilla in a hot pan and keep turning it until it is ready. This should take about 1 minute. Once ready, you can cut it into triangles to serve.
