How To Make French Toast With Berry Coulis

Step 1: You will need...
- 3 eggs
- 190 ml milk
- 8 slices of brioche, or normal bread
- 30 g butter, or two tablespoons
- 250 g mixed berries
- 60 g icing sugar
- 1 tbsp lemon juice
- 1 tsp icing sugar, for garnish
- 2 bowls
- 1 whisk
- 1 shallow dish
- 1 non-stick frying pan
- 1 blender
- 1 spatula
Step 2: Make the berry coulis
Place half the berries into the blender, add the lemon juice and the sugar. Blend until smooth. Pour the berries into a bowl, add the remaining berries and mix in.
Step 3: Prepare the eggs
Break the eggs into the bowl, add the milk and whisk together.
Step 4: Prepare the bread
Place the brioche or bread into a shallow dish. Pour some egg mixture on top and turn the bread a few times so that it is well soaked in the egg.
Step 5: Cook the bread
Put the frying pan onto a medium to high heat. Add a knob of butter. When the butter is melted and foaming, add a slice of egg soaked bread. Cook for 1 minute or until golden brown, then turn over and cook the other side. Remove from the pan.
Cook the other slices of bread in the same manner.
Step 6: Serve
Place two slices of french toast onto a plate, top with the berry coulis and dust with icing sugar to garnish.
