Step 1: Prepare the Batter
Crack the eggs into the bowl and mix the eggs a little bit. You mix the eggs because you don’t want the yolk to get stuck in lumps with the flour. So mix it all up and add your beer, mix the whole thing up together. Then add your black pepper and salt to the batter and mix it. If the Pastella batter is a little too thick you can add a bit of water, sometimes the flour reacts differently so you can add a small amount of water to thin the mixture slightly.
Step 2: Fry the Calamari
Now all you have to do is cut the calamari into little round shapes like tyres, I prefer them when they are not too thin. So when it’s cut you dip it straight into the Pastella and then into the fryer. The tentacles on the head are too big so cut them in half and add them to the Pastella as well. So now put all your calamari into the fryer, leave it to cook in the fryer for a few moments. When it looks golden and cooked put it on a plate with some napkins or kitchen roll to soak up the excess oil. Then add a sprinkle of salt on top and prepare a wedge of lemon to serve on the plate alongside your calamari.
