- 2 plantains
- sunflower oil
Heat a good amount of olive oil in a pan.
Make sure your plantain are overripe. Top and tail them, cut the skin top to bottom and peel it away.
There are two ways to fry plaintain. You can cut it on the diagonal into 1 cm thick slices and fry gently for a few minutes on either side. As plantain has a high sugar content, it will brown very quickly so keep an eye on it.
Alternatively, slice the peeled plantain in half and cut into long slices, around 0.5 cm thick. The plantain will cook more quickly in this shape so turn the slices after a minute of frying. Remove when golden brown.
As plantain retains a lot of oil, drain the fried slices on sheets of kitchen towel and serve with beans or as a breakfast dish.
