Ingredients

  • 750 ml water
  • 150 g polenta
  • knob of butter
  • olive oil

Step 1: Boil The Polenta

Boil 750ml of water in a pan. Add 150g polenta to the pan in a stream so it drops in like rain. Add a knob of butter to the polenta, stir and allow to simmer for 5 minutes.

Step 2: Set The Polenta

Grease a baking tin with a thin layer of olive oil. Pour the polenta onto the baking tray and spread out evenly over half the baking tray. Place in the fridge for 20 minutes.

Step 3: Fry The Polenta

Empty the polenta out onto the board. Cut out shapes of polenta, then add to a pan with a small amount of oil and fry the polenta over a medium heat. Flip the polenta half way through. Make sure the polenta gains a nice crispy outside, then add to a plate and serve.
