These muffins are a great afternoon snack, which won't leave you feeling guilty afterwards.

Ingredients

  • 200 g self raising flour
  • 40 g rolled or jumbo oats
  • 75 g caster sugar
  • 1 tsp cinnamon
  • 100 g sultanas or raisins
  • 100 g dried apricots, chopped
  • 75 g low fat spread, melted
  • 90 g apple sauce
  • 2 medium free range eggs
  • 1 tsp vanilla extract
  • 6 tbsp skimmed milk

Step 1: Mix The Dried Ingredients

Preheat your oven to 190° c / 370° f. In a large bowl mix together the flour, porridge oats, sugar and cinnamon. Add the raisins or sultanas and the chopped apricots and give the ingredients another quick mix together.

Step 2: Add The Wet Ingredients

In a bowl or jug beat together the 2 eggs and 75g of melted low fat spread, then mix in the milk, vanilla extract and the apple sauce. The apple sauce is a great low fat way of making the muffins nice and moist! Make a well in the middle of your dry ingredients and pour in the wet mixture, then give it a good mix together.

Step 3: Bake The Muffins

Line a cake or muffin tray with cases, and using two spoons, divide the mixture between them. This recipe should make 12 small muffins. Scatter a pinch of oats over the top of each muffin and place in the oven for 20-25 minutes.

Step 4: Leave To Cool

After 20-25 minutes your muffins should be golden brown and springy to the touch. Leave them for a few minutes in the tray to cool before placing them on a wire rack to cool completely.
