How To Make Fusilli Pasta With Extra Pine Nuts

Step 1: You will need
- 500 g fusilli pasta
- 1 small bunch parsley
- 60 g basil leaves
- 150 g pine nuts
- 250 ml olive oil
- 150 g parmesan cheese
- 2 medium cloves of garlic, peeled
- salt and pepper
- 1 chopping board
- 1 electric blender
- 1 large pot with lid
- 1 slotted spoon
- 1 frying pan
- 1 colander
- 1 large bowl
Step 2: Heat the water
Fill the pan 3/4 full of water. Place it on the hob over a high heat. Add 3 tablespoons of olive oil and a pinch of salt. Bring to the boil.
Step 3: Roast the pine nuts
Place the dry frying pan on a high heat and wait for it to get hot. When heated, add the pine nuts and allow to toast for approximately 5 minutes or until golden brown, shaking the pan occasionally.
Step 4: Make the pesto
Place the garlic into the blender, add the cheese, one third of the pine nuts and the basil. Add the parsley and half the remaining oil then blend on full power for 1 minute.
Repeat as necessary until all the ingredients are used. Season with salt and pepper, then blend again until a rough paste is achieved.
Step 5: Cook and drain the pasta
Once the water is boiling, add the pasta to the pan and stir. Allow to cook for 11 minutes. Drain through a colander when cooked.
Step 6: Assemble the dish
Transfer the drained pasta to a large bowl and spoon in the pine nut pesto. Stir well.
Step 7: Assemble and serve
Spoon a generous amount onto a serving plate and sprinkle some pine nuts over and drizzle over a little olive oil. The dish is now ready to serve.
