How To Make Gai Yang

Step 1: You will need
- 1 Chicken thigh
- some fresh coriander
- 2 cloves garlic
- pinch of salt
- 1 tbsp light soy sauce
- 1 tsp caster sugar
- 1 knife
- 1 chopping board
- 1 wok
- 1 Spoon
Step 2: Chop
Finely chop 2 cloves of garlic and a few sprigs of fresh coriander.
Step 3: Chicken
Turn the chicken skin side down and score the underside with a knife. This will allow the meat to absorb the flavours of the marinade.
Step 4: Marinate the chicken
You will be using your hands to marinate the chicken so make sure that you wash them thoroughly.
Place the chicken in a bowl and add the chopped garlic and coriander.
Then add 1 tablespoon of light soy sauce
1 teaspoon of caster sugar
and a pinch of salt.
Work the ingredients into the chicken using your hands, making sure that it becomes fully coated in the marinade.
Cover with cling film and leave to marinate for 30 minutes.
Step 5: Grill the chicken
Preheat the grill to a high temperature and place the chicken on it. Grill for about 20 minutes, turning over occasionally, until the chicken appears golden brown and blackened in places.
Step 6: Serve
Remove the chicken from the grill, cut it in half, and serve.
