How To Make Garlic Aioli
Simon Fernandez shows how to make an authentic garlic aioli with egg yolks, garlic cloves, lemon juice and sunflower oil. Serve with arroz abanda or patatas bravas and enjoy Spanish cooking at its best.

Ingredients
- 3 large cloves garlic
- 450 ml sunflower oil
- 1/2 lemon
- 3 egg yolks
- 45 ml water
Step 1: Add Sunflower Oil And Garlic
Take 3 large cloves of garlic and crush. Then take a pan, add 450ml sunflower oil and heat. Add in the garlic and cook for 5 minutes on a medium heat.
Step 2: Add Lemon Juice And Egg Yolks
Take 1/2 lemon and squeeze the juice into a bowl. Crack 3 eggs and add the yolks to the bowl. Add 45ml water and whisk well to form an emulsion.
Step 3: Whisk And Season
Pour the garlic infused oil into the bowl and continue to whisk. Keep adding the oil and whisking until you reach a thick consistency. Add salt to season. Pour your aioli into a cup. Serve.
