Step 1: You will need

  • 200 g white beans precooked, rinsed and drained
  • 100 ml olive oil for frying
  • 2 sprigs thyme leaves, chopped
  • 1 small bunch of parsley, rinsed, dried and chopped
  • 50 ml olive oil
  • 2 garlic cloves, mashed into a paste
  • 1 tbsp sherry vinegar
  • 2 black olives, pitted and halved
  • 4 slices French-style bread
  • salt and pepper
  • 1 frying pan
  • 1 bowl
  • 1 pair of tongs
  • 1 fork
  • 1 knife
  • kitchen paper towel

Step 2: Mash the beans

Pour the beans into the bowl and roughly mash with a fork. Add the garlic, 50 millilitres of oil, thyme, parsley and sherry vinegar. Season with salt and pepper and combine.

Step 3: Fry the bread

Place the frying pan on a medium heat, add the 100 millilitres of olive oil and allow to heat. Add the slices of bread and fry for 1 minute. Turn the bread over and fry for another minute. Remove onto a plate lined with kitchen towel and leave to drain.

Step 4: Assemble the dish

Take a slice of crostini and spread the paste evenly. Repeat for the other 3 slices.

Step 5: Garnish and serve

Garnish and serve the crostini recipe with half a black olive.
