Step 1: You will need...

  • 4 Italian garlic sausages
  • 250 g dry small white beans
  • 400 g canned tomatoes, crushed
  • 1 tsp tomato purée
  • 1 onion, finely chopped
  • 3 garlic cloves, sliced
  • 1 tbsp oregano
  • ¼ tsp cayenne
  • 2 bay leaves
  • 60 ml olive oil
  • 750 ml chicken stock
  • 2 tbsp parsley, chopped
  • salt and pepper
  • 1 cutting board
  • 1 knife
  • 1 saucepan and lid
  • 1 wooden spoon
  • 2 tongs
  • 1 tray
  • 1 charcoal or gas barbecue
  • 1 bottle of water to douse any flames

Step 2: Prepare the beans

Soak the beans from 4 hours to overnight in a bowl of cold water. After this time they will be plump and ready to cook. Drain the water, holding your hands over the beans.

Step 3: Make the cooking liquid

Place the saucepan over a medium-high heat and pour in the olive oil and the chopped onion. Sweat them for a couple of minutes stirring occasionally. Add the garlic and stir in cooking for a few more minutes. Next, add the tomato purée, chopped tomatoes, cayenne, oregano, bay leaf and season lightly with salt and pepper. Stir again and add the chicken stock and the beans, and let it come to a simmer.

Cover with the lid, but not completely, and allow to cook for approximately 1 hour and 20 minutes. Throughout the cooking time, we need to stir from time to time. Take off the lid after about an hour if you see that there is too much liquid. At the end of the cooking time, check the seasoning. Add more salt if needed.

Step 4: Prepare the barbecue

If you have a charcoal BBQ light it 30-45 minutes before you plan to cook. It is ready to cook on when there are no more flames and the charcoal has turned white. If you are using a gas BBQ, light it up and turn it to the highest setting. Leave it for 15-20 minutes to heat up.

Step 5: Barbecue the sausages

Using your tongs, place the sausages onto the grill. After 1 to 1 ½ minutes, turn and allow to cook the other side. Keep turning until they become golden brown. Once cooked, remove from the grill and place onto a baking tray.

Step 6: Slice the sausages

Using a large knife, slice the sausage diagonally into thick chunks. Repeat with the other three sausages.

Step 7: Finishing touches

Just before serving, add the chopped parsley to the cooked beans and stir. Then, spoon a generous helping into a serving bowl. Add the sliced sausage on top.

Step 8: Serve

We suggest serving with fresh crusty bread and mustard.
