hello! My name is Carmen and i´m from Cordoba, Spain. It´s NOT GAZPACHO. This is SALMOREJO because, the gazpacho is a drink but the salmorejo is a eat simile here.

I do the gazpacho different but this one looks great! I'll try this summer, thank Eva! I do the gazpacho like the ajo blanco (or gazpacho blanco) just instead of almonds I put tomatoes.

I was taught Gazpacho recipe in Paris Ritz hotel cooking school and it’s differs a little bit. French guys do not use bred, but uses celery and red onion and marinating vegetables in vine vinegar for a one hour in a fridge. While blending it’s also better to add a bit of tomato paste since tomato losing their color during this process. Serving with home made mayonnaise mixed with crab meat and a glass of white wine. Andalusian, what do you think about it?

If I remember my food history correctly, gazpacho pre-dates the Colombian era--it existed in some regions of Spain before New World fruits/vegetables (tomatoes, peppers) did. It was made with bread, garlic, olive oil, and almonds. It still is in some areas, and it is a white gazpacho. The version many of us are most most familiar with doesn't use bread--that is not to say this (videojug) version is not 'authentic'--all of these versions are authentic, it just depends on what you like or are used to. After all, you wouldn't say there is only one 'true' version of tomato sauce, would you? How boring that would be!

Very well done, I normally add some Onion to my gazpacho, half a big onion or just a small one, depending on how much I'm making, and half a red pepper. Me ha gustado la receta, y me han encantado las vistas desde tu casa.
