Step 1: You will need…

  • 250 ml short grain rice
  • 500 ml water
  • 1 egg
  • 1/2 tbsp ginger, grated
  • 2 tbsp soy sauce
  • 2 tbsp coriander, chopped
  • 1 tbsp basil, chopped
  • 2 tbsp flour
  • salt and pepper
  • 4 tbsp vegetable oil
  • 15 g butter
  • 4 scallops, cleaned
  • 3 radishes, sliced
  • few chives, sliced
  • 1 saucepan with a lid
  • 1 wooden spoon
  • 1 bowl
  • 1 spoon
  • 1 shallow dish
  • cling film
  • 1 spatula
  • 1 frying pan
  • 1 tray
  • 1 serving platter

Step 2: Prepare the rice

Place a saucepan over a medium-high heat. Add the water and the rice and bring to the boil, stirring occasionally.

Once boiling, lower the heat to medium low, and cover the pan with the lid, leaving a slight gap to let the steam escape. Cook for a few more minutes, stirring occasionally.

After roughly 8 minutes, when the water has reduced by half, remove the lid completely, stir and cook until the water has nearly absorbed, but the rice is still wet, then remove from the heat.

Step 3: Make the egg mixture

Take a bowl and add the egg, soy sauce, grated ginger, coriander and basil. Season with salt and pepper and then mix it well together with your spoon.

Step 4: Combine the egg mixture with the rice

Add the egg mixture into the bowl of rice and mix it thoroughly with your wooden spoon. Then add two tablespoons of flour and mix it together until it is very well combined.

Step 5: Transfer to a dish

Now spoon the rice mixture into the shallow dish, spreading it evenly.

A useful tip! You can make thin or thick rice cakes.

Finally, cover with cling film and place it in the fridge to chill and set for at least one hour, or leave overnight.

Step 7: Fry the rice cakes

Place a frying pan over a medium heat, add a little oil and allow to heat up.

Then take a spoonful of the chilled rice mixture and place it into the frying pan, creating a small round with your spoon, roughly 5 cm across. Repeat with another spoonful of the rice mixture and continue until all the rice mixture is used.

After a couple of minutes turn and cook other sides for a further 2 minutes. Then remove the rice cakes from the pan.

Step 8: Sear the scallops

Put one tablespoon of oil into the frying pan, then add the butter and allow it to melt.

Place the scallops into the pan, season with salt and pepper, and then sear for 1 minute. Then, with your spoon, turn them over to sear on the other side for another minute.

Once seared, remove from the pan and place onto a tray.

Step 9: Garnish and serve

Place the rice cakes on a large serving platter and top each one with a scallop. To garnish top with a few slices of radish and chives.

These are just some examples that you can make. As the rice cakes have an exotic Asian flavour they would go well with grilled fish or grilled seafood. Also serve with a spicy mayonnaise to add that extra kick.
