Step 1:

You will need

  • for the spiced pears:
  • 3 pears, peeled and sliced
  • ½ tsp five-spice mix (Chinese spice mix)
  • 15 g butter
  • for the batter:
  • 75 g brown sugar
  • 100 g butter
  • 2 eggs
  • 120 ml maple syrup
  • 250 g flour
  • 1 tsp baking soda
  • salt
  • 2 cm ginger, grated
  • 120 ml sour cream
  • 1 frying pan
  • 1 spoon
  • 1 mixer with the whisk attachment
  • 1 rubber spatula
  • 1 1 litre baking tin, buttered
  • 1 skewer

Step 2:

Preheat the oven

Set the temperature to 165ºC (330ºF/ gas mark 3).

Step 3:

Make the pears

Warm the frying pan over a high heat. When hot add 15g of butter followed by the chopped pears and cook for a minute. Turn the pears over and cook for a further minute. Sprinkle in the five-spice, mix well, toss to coat the pears and remove them from the frying pan.

Step 4:

Beat the butter and sugar

Put the sugar and butter in the mixer bowl and begin mixing on a medium speed.

Step 5:

Add the maple syrup and eggs

When the butter and sugar and well combined slowly pour in the maple syrup and continue mixing. Add one egg, incorporate it into the mixture and then add the other.

Step 6:

Add the dry ingredients

Add the baking soda, salt and flour and mix thoroughly. It may be necessary to scrape the sides to ensure that all the flour is incorporated.

Step 7:

Add the sour cream and ginger

Blend in the sour cream and ginger and remove the bowl from the mixer.

Step 8:

Stir in the pears

Fold the pears into the mixture and pour it into a buttered baking tin.

Step 9:

Bake

Place the tin in the centre of the oven and bake for 40-50 minutes.

Step 10:

Remove from the oven

Insert a skewer into the centre of the gingerbread. If it is clean when removed then the cake is ready. Take it out of the oven and leave to cool down.

Step 11:

Serve

When cool, remove the gingerbread from the baking tin and serve sliced as it is or with butter.
