How To Make Gluten Free Jam Tarts

  • 220 g Doves Farm gluten free flour
  • 60 g pure sunflower spread
  • 60 g vegetable shortening
  • 2 tbsp golden caster sugar
  • 1/2 tsp xantham gum
  • 3 tbsp cold water
  • a jar of your favourite jam

Step 1: Make The Pastry

Preheat the oven to 180 degrees Celsius. Place the flour, xanthan gum and caster sugar into a mixing bowl and cut the margarine into the flour until you have a breadcrumb consistency. Tip in the cold water, tablespoon by tablespoon, pulling the dough together with knife or palette knife as you go, until the mixture begins to form a dough or the breadcrumbs begin to cling and pull together. Use the tips of your fingers to pull the dough together into a ball. Knead lightly for a minute, until smooth and elastic to the touch.

Step 2: Roll Out The Pastry

Lay the pastry between two large layers of clingfilm and roll the pastry out to about 3mm thick. Peel off the uppermost layer of clingfilm and use your circular pastry cutter to cut out as many little tarts as you can, kneading and re-rolling the pastry where you need to.

Step 3: Bake

Carefully fit each circle in to the tart tin, pressing the pastry into the curves and filling any cracks that may appear. Place one teaspoonful of jam in to each tart and then bake in the oven for 13 to 15 minutes until the pastry is cooked and the jam is bubbling. Remove the tin from the oven and then immediately add another teaspoonful of jam to each tart, carefully mixing this with the cooked jam. Transfer the tarts to a cooling rack and then serve when cool enough to eat!
