Serves:

Preparation Time:
2 hours
Total Time:
2 hours

Step 1: You will need…

  • 400 g leg of lamb, cut into cubes
  • ½ lemon juice
  • 60 ml olive oil
  • 1 tbsp oregano
  • ½ tsp rosemary, chopped
  • 2 cloves of garlic, minced
  • 1 onion, cut into large cubes
  • 1 green pepper, cut into large cubes
  • salt
  • pepper
  • 4 skewers that have been soaked in water
  • 1 tongs
  • 1 tray
  • 1 spoon
  • 1 either a charcoal or gas barbecue
  • 1 bottle of water to douse any flames

Step 2: Prepare the ingredients

Cut the ingredients ready to cook.

Step 3: Prepare the barbecue

If you have a charcoal BBQ light it 30-45 minutes before you plan to cook.

It is ready to cook on when there are no more flames and the charcoal has turned white.

If you are using a gas BBQ, light it up and turn it to the highest setting. Leave it for 15-20 minutes to heat up.

Step 4: Marinate the lamb

Add the rosemary to the lamb. Then the oregano, the garlic, the lemon juice, the olive oil and combine together. Leave to marinate for between one to four hours. If for more than one hour, put it in the fridge.

Step 5: Make skewers

Thread a piece of lamb on to a skewer. Follow with a piece of onion, then a piece of pepper, and again with a piece of lamb. Fill up the skewers, repeating the process in the same order, until all the ingredients are used, ending with a piece of lamb on each skewer.

Season with salt and pepper. Then turn over and season with salt and pepper again. Your skewers are now ready to barbecue.

Step 6: Barbecue skewers

Place the skewers on the barbecue. Cook for 3-4 minutes each side. Be sure to keep turning them so they will cook evenly.

Once cooked remove from the grill and place on a baking tray.

Step 7: Serve and enjoy

Serve immediately straight off the grill. They can be served with pitta bread, Tzatziki (sat-ziki) sauce, and a few sliced tomatoes.

if you put these in a oven . i use metal skewers myself . put them on a miiddle tray . also put a tray at the bottom of your oven to catch the drips . gas mark 5 . if they stick on the bars don't worry when there cooked they will come off easy . also do make sure you use a different tray . make sure all the meat are the same size so they cook at the same time . one on the video lookes a bit raw ...
