Ingredients

  • 4 cherry tomatoes
  • 1 tsp palm sugar
  • 5 green beans
  • 2 tbsp dried shrimp
  • 2 tbsp fish sauce
  • 1 thai birds eye chilli pepper
  • 1 lime
  • 3 tbsp toasted peanuts
  • 2 garlic cloves
  • 1/2 green papaya
  • 1/2 carrot

Step 1: Make The Dressing

Chop up 2 cloves of garlic and put them into a pestle and mortar with a little salt, then mash into a paste. Add in 1 tsp of palm sugar and 4 cherry tomatoes cut in half to the pestle and mortar, then add 5 green beans cut into 1 inch pieces. Pound these ingredients a little to release the juices. Add 2 tbsp dried shrimp, 2 tbsp fish sauce and 1 chopped Thai birds eye chili and pound again.

Step 2: Adding Vegetables

Add the shredded papaya and carrot, the juice of 1 lime and 3 tbsp toasted peanuts to the bowl and mix well.
