Step 1: You will need…

  • 8 small whole artichoke hearts
  • 4 tsp olive oil
  • 4 garlic cloves
  • 5 slices of cured ham
  • 50 g shaved parmesan
  • 2 bunches of rocket
  • for the vinaigrette:
  • 100 g mushrooms
  • 80 ml Madeira wine
  • 60 ml olive oil
  • 1 tbsp truffle oil
  • 1 tbsp sherry vinegar
  • 1 tbsp thyme
  • salt and pepper
  • 1 frying pan
  • 1 saucepan
  • 1 tray
  • 1 spoon
  • 1 large bowl
  • 1 slotted spoon
  • 1 serving dish

Step 2: Make the vinaigrette

Heat the saucepan over a medium/high heat. Once hot, add 30ml of olive oil and the mushrooms and allow them to sweat for approximately 3 minutes. Add the Madeira wine and cook for another 2 minutes before removing from the heat.

Step 3: Finish the vinaigrette

Season with salt and pepper and add the remainder of the olive oil, truffle oil, sherry vinegar and thyme. Mix well and put aside.

Step 4: Grill the artichokes

Place the frying pan over a high heat and pour in the olive oil. Cut side down, grill the artichokes for approximately 1 minute.Add the sliced garlic and grill everything until golden-brown. Use the slotted spoon to drain and remove from the heat.

Step 5: Present the salad

Into the large bowl add the rocket, artichokes, garlic, ham and parmesan. Season again with salt and pepper and drizzle over the vinaigrette. Mix thoroughly.

Step 6: Serve

Arrange the salad on the serving dish, garnish with the remaining vinaigrette and serve.
