Step 1: You will need

  • 400 g baby back spare ribs, divided into 2 racks of four ribs
  • 4 shallots, sliced
  • 2 lemon grass stalks, chopped
  • 1 coriander, root ends only, chopped
  • 2 tbsp ketchup
  • 4 tbsp brown sugar
  • 4 tbsp honey
  • 60 ml soy sauce
  • 4 tbsp sambel olek, chilli sauce, found in Asian food suppliers
  • 750 ml water
  • 5 stems of coriander, for garnish
  • 1 barbecue
  • 1 pair of tongs
  • 1 sauce pan with a lid
  • 1 tray
  • 1 brush
  • 1 sieve
  • 1 small sauce pan
  • 1 spoon

Step 2: Prepare the barbeque

If you have a charcoal barbeque light it thirty minutes before you plan to cook. It is ready when there are no more flames and the charcoal has turned white. If you are using a gas barbeque, light it up on high and leave it for twenty minutes.

Step 3: Make the marinade

Into a large saucepan place the shallots, lemon grass, coriander, ketchup, sugar, honey, soy sauce, sambal olek, and water. Now add the spare ribs.

Step 4: Cook the spare ribs

Bring the marinade to a simmer and partially cover with the lid. Cook for about one and a half to two hours or until the spare ribs are soft but not falling a part.

VIDEOJUG TIP:
The spare ribs can be cooked in this manner up to one or two days in advance.

Step 5: Reduce the marinade

Once the ribs are cooked, take them out with the tongs placing them onto a tray. Strain the marinade into a small saucepan. Separate the liquid from the solids by pressing the solids with a spoon. Now reduce the liquid for a few minutes.

Step 6: Barbecue the ribs

Place the ribs on the grill and brush with the reduced marinade. Give them about two to three minutes on each side until they are nicely glazed.

Step 7: Serve

Place the spare ribs on to a plate and add a sprig of coriander as garnish. Also, add a finger bowl with water and a slice of lemon. You can present these tasty ribs as a rack or cut into individual ribs, served with rice or chips.
