How To Make Grilled Cod With Anchovy Butter

Step : You will need…
- 4 x 175 g cod loins
- salt and pepper, to taste
- 4 tbsp flour
- 2 tbsp olive oil
- 4 tbsp butter
- 2 cloves of garlic, minced, minced
- 1 small tin of anchovies, drained and rinsed
- the juice of 1/2 a lemon
- 2 tbsp fresh parsley, chopped
- 1 non-stick frying pan
- 1 wooden spoon
- 1 saucepan
- 1 spatula
Step 1: Prepare the fish
Sprinkle the four cod-loins on both sides with salt and pepper and lightly dust them in flour. Rub the surface of the fish to distribute the flour evenly.
Step 2: Heat the frying pan
Pour a little oil into a non-stick frying pan and place it over a medium-high temperature to heat.
Step 3: Cook the cod
Add the cod, skin-side down, and fry for three minutes until it turns light brown or begins to flake. Turn the fish over, fry for a further minute and remove.
Step 4: Prepare the anchovy butter
Put the left-over olive oil and butter into a small saucepan and heat. When the butter melts, add the garlic and anchovies, lower the heat slightly and fry gently while stirring to combine the ingredients.
Add the lemon juice, fresh parsley and stir. Season with black pepper to taste.
Step 5: Serve
Pour the anchovy butter over the cod and serve immediately.
