How To Make Grilled Red Mullet With Tomato & Green Bean Salad

Step 1: You will need...
- 4 red mullets, weighing 100g each, cleaned
- 2 tomatoes, deseeded and sliced
- 100 g green beans
- 1 clove of garlic, chopped
- 2 tbsp coriander, chopped
- 1 tbsp basil, chopped
- 1 lime juice
- ¼ tsp chilli flakes, less if you don't like spicy food
- 60 ml olive oil
- salt and pepper, to taste
- 1 barbecue grill
- 1 chopping board
- 1 knife
- 1 saucepan
- 1 slotted spoon
- 1 bowl of iced water
- 1 bowl
- 1 tray
- 1 pair of tongs
- 1 metal spatula
- 1 spoon
- 1 brush
Step 2: Check the grill
If you have a charcoal barbeque light it 30-40 minutes before you plan to cook. It is ready when there are no more flames and the charcoal has turned white. If you are using a gas barbeque, light it up on high and leave it for 20 minutes.
Step 3: Cook the beans
Place a saucepan three-quarters of the way full with water over a moderate heat and bring to a boil. Season with a little salt and when it is boiling add the green beans. Cook them for 2 minutes and then remove and place them in iced water.
Step 4: Cut the beans
On a chopping board remove the two ends of the beans and then cut them in half, and finally, cut them into thin strips. When you have finished, place them in a bowl.
Step 5: Make the salad
Into the bowl add the tomatoes, coriander, basil, lime juice, garlic, chilli flakes and 4 tbsp of olive oil. Season well with salt and pepper and mix well.
Step 6: Season the fish
Brush the mullet with the remaining oil and season generously with salt and pepper.
Step 7: Grill the fish
Place the fish on the grill and cook for 3-4minutes on each side.
Step 8: Present and serve
Place two fish on a large plate, arrange the salad on top and for a final touch, spoon over some of the juices. Serve immediately, either as a starter or main course.
