How To Make Grilled Tomatoes With Leek & Olive

Step 1: Prepare tomatoes
- 4 small tomatoes
- 15 g butter
- 3 tbsp olive oil
- 3 medium leeks (sliced)
- 50 g pitted black olives, roughly chopped
- 1 clove of garlic
- 30 g breadcrumbs
- 1 tbsp parsley, finely chopped
- 1 tbsp basil, finely chopped
- 2 tbsp grated parmesan
- Salt & pepper
- 1 sharp knife
- 1 cutting board
- 1 frying pan
- 1 wooden spoon
- 1 bowl
- 1 spoon
- 1 baking sheet, lightly oiled
Step 2: Preheat the grill
Adjust the temperature of the grill to a high setting.
Step 3: Sweat the leeks
Melt the butter in the frying pan on a moderate heat and add the olive oil. Then add the leeks and sweat for 5-7 minutes until they are soft.
Step 4: Add olives, garlic, salt & pepper
Add the chopped olives and garlic. Season with salt and pepper. Stir for 3 minutes and pour into a bowl.
Step 5: Fold in breadcrumbs, herbs and parmesan
Fold in the breadcrumbs, parsley, basil and parmesan.
Step 6: Top tomato halves with leek mixture
Spoon some of the leek mixture onto each tomato half and place into roasting tin.
Step 7: Grill for 15 minutes
Grill the tomatoes for about 15 minutes until they are cooked.
Step 8: Serve
Serve immediately.
