Step 1: You will need...

  • 2 tbsp olive oil
  • 4 x 150 g tuna steaks
  • 25 g spinach
  • salt and freshly ground black pepper
  • for the relish:
  • 80 ml olive oil
  • 200 g green olives, pitted and sliced
  • 2 celery stalks, finely diced
  • 1 tbsp red wine vinegar
  • 2 cloves of garlic, finely chopped
  • 1 red chilli, deseeded and chopped
  • the zest of one lemon, grated
  • salt and freshly ground black pepper
  • 3 tbsp flat leaf parsley, chopped
  • 1 brush
  • 1 grill pan
  • 1 fish slice
  • 1 sharp knife
  • 1 mixing bowl
  • 1 spoon
  • 1 chopping board

Step 2: Make the olive relish

Mix together the olive oil, chopped olives, diced celery, red wine vinegar, garlic, red chilli, grated lemon zest and the parsley. Season with salt and pepper. Once mixed, leave the relish to marinate for 1 hour.

Step 3: Prepare the tuna steaks

Brush both sides of the tuna steaks with olive oil and season well with salt and pepper. Turn the steaks over and season the other side.

Step 4: Cook the steaks

Place the grill pan on a high heat. When the pan is hot, carefully add the tuna steaks. Cook for 30 seconds and then turn the steak ninety degrees and cook for a further 30 seconds, leaving an attractive pattern on the tuna. Now turn the steak over and cook for a final 30 seconds. Take the tuna out of the pan and leave to rest for 2 minutes.

Step 5: Serve the grilled tuna

First, arrange a few leaves of spinach on the plate. Next, place the tuna onto the chopping board and cut in half. Place the two halves of grilled tuna on top of the spinach with the crossed side showing. Finally, spoon on a generous amount of the olive relish and use the juice to decorate the plate.
