I am a native Californian (which means that I am very familiar with Mexican food) and this is NOT how guacamole should be made. For one thing, I have never had Mexican with shallots. My biggest problem with this recipe, however, is that there are far too many ingredients. It should only have avacado, lime juice, and salt, mashed roughly with a fork, possibly along with chopped garlic. It should not be spicy or grey.

As someone who has family still living in Mexico, I can tell you that if you gave this to a Latin person, they would laugh at you and/or smack you. Guac isn't supposed to be spicy, its supposed to complement the salsa. If you really want to make Guac this is all you need: Avocados, garlic salt, lime, mash it with a fork until its a bit creamy, it should be bright green, not a flat pasty green I really don't know what happened with their guac.

Where the part of Mexico my family is from, the basic ingredients are chopped tomatoes, cilantro, onions, avocado, and small amount of lime juice.Mash with fork only.. This will give a chunky texture and will compliment any dish. If you wish to make it spicy, can mix a small amount of serrano chilli, never jalapeno.!!

I know that there are different ways to make Guac. When I make my Guacamole (from Mexico) I add tomatillos, cgarlic, 0ion, chile verde(optional ) (green chile not jalapeno), cilantro, limon and salt. It is sooo good. I'm from Mexico city, my mother taught me how to make it.

I am also a native californian. I have to be honest, my mexican friends would probably be offended if they watched this, because so much of the essential and defining ingredients which give the vital flavors of guac are just omitted from this recipe. Try Googling "mexican guacamole" and see what i mean.

If you can't be polite do't post a message. As a new comer to this site I find it very interesting. I have aq Mexican restaurant cloe by me that I have always avoided because i don't know the menu. Now I can eat there ti sample the menu and decide what I want to make at home- and through this site know how to make it. Thank you John, Luton, near London, England.

por cierto: el guacamole sabe mas rico si lo acompañas con enchiladas potosinas ;)

Mexican guacamole can be prepared in different ways. I had never seen this ways, it looks very complicated. The simple way is to just get the avocados, some salt, lime juice and a little bit of water if necessary (it depends if you want it creamy or not). And just blend with a flork!!! A blender is absolutely unnecessary! If you want to, you can add pieces of chopped tomatoes, cilantro and onion.

Decent recipe. Maybe fresh chilli instead of cayenne. Also i sometimes add a little tomato or, even better, some salsa if some's handy, maybe a tablespoon. A lot of people moan about this not being authentic and all i can say is... tomatillos aren't exactly commonplace most places worldwide.

The easiest way of doing it is by just adding mayonaisse. Hmmm! Just Avocado + mayonaisse - And in the original recipe, if you substitute onion for the echallotte, it would also work... I have always ate them alone as a first dish, but if I might add some other thing, I would add some roasted shrimps or another simple sea fruit (without any sauce).
