How To Make Ham Quiche

Ingredients
- 500 g shortcrust pastry
- 150 ml double cream
- 2 large eggs
- salt
- pepper
- 50 gruyere cheese
- 100 g smoked bacon
- 1/2 medium onion
- 150 g cooked ham
- 150 g creme fraiche
- nutmeg
- lentils
Step 1: Prepare The Pastry
Leave the shortcrust pastry in the fridge for about an hour before usage. Take it out of the fridge, and, using a rolling pin, press down in different parts on the pastry to flatten it. Turn the pastry around and keep repeating. When the pastry is flat enough, throw some flour onto the table and begin rolling it with the pin.
Step 2: Make The Quiche Base
Now take a cutting circle, one that would serve about 4 - 5 people, and place it underneath the pastry in the center. With one hand, lightly push the pastry into the inner side of the ring all the way around. Now tuck the excess pastry down on the side. Taking a knife and gently cut around the pastry at the base of the ring and discard the excess pastry.
Step 3: Prepare The Base Rim
Now you must gently tuck in the upper pastry into the slight slit on the top rim of the cutter, and do this all the way around, and then go all the way around and gently press it in tighter to make sure it's secure.
Step 4: Prepare Base For Baking
Place one finger on the inner side of the outer rim while you firmly nip the outer side of the rim with another finger, and do this all the way around. Then use something small and sharp, and repeatedly poke the base of the pastry to dent the base. Place the pastry in its ring onto a baking tray. Now place a sheet of baking paper inside the pastry case, fill it up with lentils so they rest all over the base of the pastry case, and then scrunch up the outer excess paper into the middle so the pastry case is filled with such. Now place this into the oven for about 10 - 15 minutes at about 220 degrees Celsius.
Step 5: Make The Filling
Drizzle some rapeseed oil into a frying pan, finely dice your half onion, and then sweat it off. While this onion is sweating, dice up your bacon and add the bacon to the pan. While these ingredients are frying, take your ham and dice this up into slightly larger pieces, and add this to the pan with the other ingredients. Stir all of these ingredients well, and leave for about 1 - 2 minutes to cook. When these ingredients are nicely cooked, place them into a mixing bowl and place it into the fridge for about 10 - 15 minutes.
Step 6: Fill The Pastry Case
Place this mixture into the base of the pastry case nice and evenly, spreading it out nicely.
Step 7: Make Topping Mix
Crack your two eggs into a mixing bowl, add your double cream, add the creme fraiche, add a pinch of pepper and a pinch of salt, and then add two pinches of nutmeg. Whisk this together until it is nice and smooth with no lumps, and evenly drizzle it onto the top of the filling. Now grate the gruyere cheese on top of the filling and mix.
Step 8: Bake And Serve The Quiche
Place this quiche into the oven for about 25 - 30 minutes at 175 - 180 degrees Celsius. Taking the quiche out of the oven, slice into about five portions and serve.
