Ingredients

  • 2 ripe avocados
  • 1 small coriander bunch
  • rapeseed or olive oil
  • 4 ripe vine tomatoes
  • 1 red onion
  • chilli flakes
  • 1/2 garlic clove, grated
  • 1 lemon
  • 1 small basil bunch
  • salt
  • pepper

Method

Avocado dip:

Cut the avocados in half. Tap the knife into the stones and twist to get the stones out. Cut a criss-cross pattern into the avocado while it's still in its skin, then scoop the flesh out into a bowl. Give the avocado a rough mash with a fork. Mix in half a diced red onion, a chopped bunch of coriander, the juice of half a lemon, a pinch of salt, a grind of pepper and a lug of oil. Try the dip for seasoning and lemon juice.

Tomato salsa:

Dice the tomatoes and put them in a bowl. Add half a diced red onion, a sprinkle of chilli flakes, a pinch of salt, the garlic, the juice of half a lemon, and a chopped bunch of basil. Grind in some pepper, add a lug of oil, and mix well. Taste for seasoning.
