How To Make Heirloom Tomatoes With Pine Nuts

Step 1: You will need
- 4 anchovy fillets
- the juice of 1/2 a lemon
- 4 tbsp olive oil
- freshly ground black pepper
- 2 tbsp pine nuts
- 2 heirloom tomatoes
- 1 tbsp basil, chopped
- 1 pestle and mortar
- 1 small frying pan
- 1 sharp knife
- 1 cutting board
- 1 spoon
Step 2: Make the vinaigrette
Mash the anchovy fillets to a paste in the pestle and mortar. Add the lemon juice and continue to mash. Add the olive oil and black pepper and mix well. Pour into a bowl and set aside.
Step 3: Dry roast the pine nuts
Place the pine nuts in a dry frying pan over a moderate heat and roast until golden. They do not need oil. Keep moving them so that they don't burn. When roasted remove from the heat.
Step 4: Prepare the tomatoes
Slice the tomatoes. Discard the very top and bottom of each one. Arrange them on a serving platter and sprinkle over the pine nuts and basil.
Step 5: Serve
Finally, mix the vinaigrette, drizzle it over the tomatoes and serve.
