How To Make Herb Rissoles With Tomato Sauce

Step 1: You will need

  • 250 g breadcrumbs
  • 1 onion, finely chopped
  • 3 garlic cloves, finely chopped
  • 1 tbsp thyme leaves, chopped
  • 1 bunch parsley rinsed, dried and chopped
  • 1 tbsp rosemary leaves, chopped
  • 1 whole egg
  • 1 egg yolk
  • 100 g grated cheese
  • 3 tbsp double cream
  • 150 ml olive oil
  • salt and pepper
  • for the tomato sauce:
  • 4 ripe tomatoes ,cored and diced
  • 1 garlic clove, finely chopped
  • 50 ml olive oil
  • salt and pepper
  • 1 large frying pan
  • 1 frying spatula
  • 1 large bowl
  • 1 spatula
  • 1 small bowl
  • 1 spoon
  • paper towel

Step 2: Fry the onions and garlic

Put the frying pan on a medium heat, add half the oil and the chopped onion. Fry for 2 mins until soft. Add the garlic, turn the heat down to low and continue to fry for a further 5 mins stirring occasionally. Turn off the heat and set aside.

Step 3: Combine the ingredients

To the large bowl add the breadcrumbs, thyme leaves, rosemary leaves, parsley, cheddar cheese, the whole egg, the yolk of the egg, cream and the fried onions and garlic and combine well with your hands. Season with salt and pepper and mix once again.

Step 4: Mould the patties

Take a good handful of the mixture and mould into a fishcake shaped patty. Repeat until you have four then place them in the freezer for 15 minutes to chill.

Step 5: Make the sauce

Take the small bowl add the tomatoes, garlic and the 50 millilitres of olive oil. Season with salt then mix thoroughly.

Step 6: Fry the patties

Place the frying pan on a low heat, add the remaining olive oil, the patties and fry for 5 mins. Turn over and fry for another 5 mins or until golden brown. When cooked place on a plate a plate lined with paper towel and drain for 1 min.

Step 7: Serve

Place a patty on a plate, add a generous spoon or two of the tomato sauce and serve.
