How To Make Homemade Lollipops

Who doesn't love a colourful lollipop? Chef Martha Swales shows you how to make fun blue lollipops, perfect for kid's parties or as a cheeky treat.

Ingredients

  • 100 ml water
  • 250 g granulated sugar
  • 1/2 tsp cream of tartar
  • blue food colouring

Method

Place the sugar, cream of tartar and water in a heavy based saucepan on a high heat until the sugar is dissolved. Once the sugar has dissolved, turn the heat up and bring the mixture to a boil. Place a sugar thermometer and stop stirring the mixture. Boil it for around 5 minutes. Add the food colouring and take off the heat when the mixture hardens and can be cracked easily after being placed in cold water.

Leave the mixture to cool slightly. In the meantime, grease the star lollipop moulds. Spoon the sugar mixture into the moulds, smoothing out into the corners. Place the sticks into the mixture and moulds. Leave to harden and set in the fridge or at room temperature. Once set, the lollipops will last for around 2 weeks. Store them in an airtight container with greaseproof paper to separate them.
