How To Make Honey Glazed Almond Trout

Step 1: Prepare the flour
- 400 g filleted trout
- 100 g plain flour
- 1 tbsp coriander powder
- 200 ml milk
- 6 tbsp vegetable oil
- 1 tbsp red wine vinegar
- 100 g raw almonds, sliced
- 30 g butter
- 3 tbsp honey
- ½ tbsp fresh basil, shredded
- freshly ground black pepper and salt
- 1 frying pan
- kitchen paper
- 1 spatula
- 2 trays
- 1 bowl
- 1 spoon
Step 2: Coat the fish
Dip the trout into the milk then dust with the seasoned flour.
Step 3: Heat the oil
Add the oil and a knob of butter to the frying pan and heat over a moderate temperature.
Step 4: Cook the fish
Cook the fish in batches for 1½ minutes on each side. Remove and place on a tray covered with kitchen paper.
Step 5: Cook the almonds
Wipe the pan clean and add the butter. When melted put the almonds in the pan and cook until golden brown. Season with salt and pepper.
Step 6: Add the honey
Mix in the honey, red wine vinegar, and basil and take the pan off the heat.
Step 7: Pour and serve
Once heated through, pour the sauce over the trout and serve at once.

I tried it, but I think I may have brunt the almonds cause they smelt really weird!
