Hi, I'm Matt Kemp from the Underground Cookery School. I'm going to show you how to make a series of sauces. Hope you enjoy.

Today, I'm going to show you how to make the perfect wing sauce. First stage is I've got some melted butter here, and that's going to go into my mixing bowl now. I've also got some honey, I'm going to pour that in as well.

I like to do roughly equal quantities that just depend on the size. I'm also going to add some cayenne pepper, which is really going to spice this up. I'm also going to add quite a lot of tabasco sauce.

This is really going to give it the heat that we want to get into it. I'm just going to give it a good old mix. Now, there you have the perfect wing sauce.

The idea, in fact, if I just hit some of this wing sauce unto a plate, you'll have an idea just of the sort of consistency it is. The next stage would obviously be to get some chicken wings. Give them a good old toss in there, and it's the sort of thing you can actually leave for a period of time, maybe two or three days, but of course, being the chicken wings are very fresh.

The longer you leave the sauce on the wings before cooking them, the more flavor there's going to be, and the more time all those flavors are going to have to marry with each other and bring out the very best in them. Once you've dressed the sauce onto the wings, roast them off onto the oven on about 180 degrees for, they only probably need about 15 or 20 minutes. I like to get them really crispy, which is why I would say 15 or 20.

What you can also do is you can put them in say, maybe 7 or 8 minutes and finish them off on the barbecue. In any event, that is how to make the perfect wing sauce.
