Step 1: You will need:

  • 4 eggs
  • 6 tbsp olive oil
  • 1 onion, chopped
  • ½ red pepper, diced
  • ½ green pepper, diced
  • 3 garlic cloves, minced
  • 250 g tomatoes, chopped
  • 1 tbsp jalapeno pepper, minced
  • 1 tsp cumin powder
  • 100 ml chicken stock, or water
  • 2 tbsp coriander, chopped
  • 4 tortillas
  • salt and pepper
  • 1 saucepan and lid
  • 1 wooden spoon
  • 1 frying pan
  • 1 spatula

Step 2: Begin the sauce

Place the saucepan on a medium to high heat and allow it to warm through a little. Add some olive oil followed by the onion, red pepper and green pepper. Stir and allow them to cook for roughly five minutes until soft. Stir occasionally to stop them burning. Add a little more oil, whilst it's cooking, if needed.

Step 3: Continue the sauce

Add the garlic, stir it in and allow it to cook for about a minute. Add the tomatoes, jalapenos, cumin powder and the stock. Season it all with some salt and pepper and stir once more to mix everything together. Lower the heat to a simmer and cook until it thickens, which should take about 5-7 minutes.

Step 4: Add the eggs

Once the sauce begins to thicken, gently pour the eggs on top. Cover with the pan lid and reduce the heat. Let it cook for another 7-10 minutes or until the eggs are set. Once set, remove the pan from the heat.

Step 5: Fry the tortillas

Let the frying pan warm through again. Add a small amount of oil then place one tortilla into the hot pan. Fry it for a few seconds on each side, just enough to warm it through and make it slightly crispy. Remove it and set it aside. Pour in a drop more oil, add another tortilla into the pan and fry. Continue the frying process with the remaining tortillas.

Step 6: Garnish and serve

Put a tortilla on a serving plate, place an egg into the centre and spoon some of the sauce around the egg. Sprinkle over some coriander and serve.

    Oh my...they just ruined this recipe. I've been making this since I was a kid in Texas & California and this is no where close to a true recipe. It appears to be more of a version for people who may not like the traditional recipe. I'm thinking this is a East Coast version of the recipe (no offense meant), because it what I have gotten every time I have ordered it since living in Northern Virginia. What happened to the corn tortillas, beans and rice? Oh well, I am sure it works for some. :)

    You have to use corn tortillas, and it's served with refried beans and a little sour cream on top of the beans.

    No,no, this it is not true recipe, and the tortillas that use are not the correct, they should use tortillas of corn, not of wheat. Please, they come to Mexico or seek the authentic Mexican recipes.

    Huevos Rancheros are made with corn tortillas and a good green o red salsa, nothing like this. how can you ruin something so delicious and easy. please come to Mexico and try the real deal which is nothing like this.

    I usually fry the tortilla soft, then add a little sauce, a couple of tablespoons of refried beans, poached eggs on top and sauce on top of that. Sprinkle with a little cilantro. Wonderful. Ernestine Reiman

    funny; to the "shakshuka in hebrew" comment: shakshuka in turkish is made with eggplant, green pepper, tomotoes and garlic. This is menemen in turkish...

    the way i make it is. for the sauce; onion, either poblano or jalapeno, diced tomatoes, tomatoe sauce and some water because it will thicken. salt and pepper. and garlic salt. but i do not add eggs to sauce!! i make the eggs on the side. this is the first time i have seen the egg cooked inside the sauce. and i use corn tortilla on the bottom. fry enough to soften but not like a tostada. but i have tried so many huevos rancheros that not one has ever been the same.
