Prepare the onions

Chop the onions in half and cut the halves into thin slices.

Melt the butter and oil

Place the frying pan on a low heat and add the butter and then the oil. Stir it a little to help it to melt.

Preheat the oven

Set the oven at 175ºC (320ºF/ gas mark 3).

Cook the onions

Add the onions to the pan of melted butter and stir. Allow them to soften by frying for approximately twenty minutes, stirring occasionally. The onions should be soft and golden. Season with salt and pepper and stir again.

Prepare the pastry

Place the baking tray on the chopping board and sprinkle evenly with flour. Shake off the excess flour. Take the defrosted pastry and unroll it. With your pan lid, cut out four circles and place them on the floured baking tray.

Cook the tartlets

Spoon the cooked onions evenly onto the four pastry circles. Curl up the edges of the puff pastry to prevent any juices escaping in cooking and place the baking tray in the middle of the oven. Cook for twenty minutes or until the pastry is puffed and golden.

Decorate the tartlets

Once cooked, remove from the oven and place on the chopping board. Place two anchovies in a criss-cross pattern on top of the tartlets and place one black olive in the centre. If you are making this a vegetarian dish omit the anchovies.

Place one tartlet on an individual serving plate and serve. As a serving suggestion, we recommend that you garnish with a selection of dressed salad leaves such as rocket, lambs lettuce, or some radicchio leaves or use a tart vinaigrette dressing.
