Step 1: Cube the meat

  • 1 ¼ kg lamb or beef
  • 2 tbsp of seasoned flour
  • 350 g onions, sliced
  • 220 g carrots, sliced
  • 2 medium leeks, washed and sliced
  • 1 large potato, peeled and diced
  • 1 ¼ ltr chicken stock
  • salt and pepper
  • 2 bay leaves
  • 250 ml red wine
  • 25 g butter
  • 4 tbsp oil
  • and for the dumplings:
  • 110 g self-raising flour
  • 1 tbsp fresh parsley
  • 50 g shredded suet
  • 1 large saucepan
  • 1 cutting board
  • 1 serving dish
  • 1 knife
  • 1 slotted spoon
  • 1 spoon
  • 1 serving bowl

Sprinkle the meat cubes with seasoned flour.

Step 2: Sear the meat

Heat up your saucepan and add a little oil and butter. Lightly sear the meat. You will probably have to do it in batches.

Step 3: Prepare for stewing

Pour the wine into the pan to flavour the ingredients. Layer the meat, onions, carrots, leeks and potatoes on top.

Step 4: Simmer

Pour in the stock and add the bay leaves. Bring it to a simmer. Let it cook for 2 hours with the lid on.

Step 5: Prepare the dumplings

Now for the dumplings! Mix the flour, parsley, salt and pepper in a bowl. Gently add the suet. It should not be rubbed in. Add some cold water and gradually mix into an elastic dough.

When you have achieved the right consistency, divide the dough into eight dumplings.

Step 6: Set aside the meat

Once the Irish stew is ready, remove all the meat and vegetables, transfer them to a warm serving dish and cover with foil. Strain the liquid into a smaller saucepan to cook the dumplings.

Step 7: Cook the dumplings

Bring the remaining liquid back to the boil and put the dumplings in the pan. Cover them and leave them to boil for about 20 to 25 minutes.

Do not let them come off the boil.

Step 8: Prepare to serve

Arrange the meat, vegetables and dumplings in your serving dish, pour over the sauce, sprinkle over the chopped parsley, taste and season if required.
Serve the Irish stew while piping hot.

    I don't know what this is but I can assure you it is not Irish stew. Wine, bay, dumplings... To mention just a few things... Stew is a poor mans meal not a french gourmet dish...

    Great stew recipe for a beef stew with dumplins, but don't faff around with removeing the meat. Put the dumplins in with a tight lid for the last 20 minutes of the casseroling. This is NOT Irish stew. Oh I'm also a chef and do find that there is to much messing with good food these days. KISS Keep It Simple Stupid.

    Ps, i've never seen anyone take the meat and veg out to cook the dumplings, we always cook them together with the stew...

    not sure about the red wine??? my mum never made it like that and red wine isn't an irish ingredient. also my mum tends to use lamb or mutton, never had it with beef before...

    This is as close to Irish stew as Barack Obama been a grand wizard of the KKK , have not tried this recipe , sounds good , but take it from an FBI ( Full blooded Irish) this is not Irish stew ........maybe the english accent of the narrator is a clue !!!!!!!!!!!!!!!

    I am irish. I love the way it says just throw in the stock. When you have finished browning the meat, remove it and throw some floue in the pan. Stirr like amd and then add water and put over a medium heat. Stirr again like mad. Add water when boiling to pot with meat. Add more water. Add carrots and onions. Boil for around 2 hours (the longer the better) Add a load of pealed potatoes twenty minutes before you wantto serve. Never add red wine. Always make sure there is plenty of juice. one to note. If this is left after cooking to sit, it always tastes better the day after. Lastly if you are making it you might want to make a large amount cause it freezes very well.

    Know what? I cooked this meal for dinner yesterday (11/9/08) and it came out very well. Even I excluded only 2 ingredients were Red Wine and Suet. One of comments below stated that Red Wine isn't necessary and Suet is totally out of health list. Suet is simply F A T and no need to feed toxic my body. For info about Suet then visit at http://en.wikipedia.org/wiki/Suet. I don't recommend anyone to add Suet to make dumplings or else for health sake. I care for people rather than food.
