How To Make Italian Beef
Italian beef stew is rich with tomatoes, and has a lovely nutmeg aroma. In this step by step guide Giancarlo Caldesi, chef and restaurateur, shows you how to make it.

Ingredients
- 1 1/4 kg beef chuck steak
- 1 onion, chopped
- 50 g butter
- 50 ml olive oil
- 800 g tinned plum tomatoes, mashed
- 3 bay leaves
- salt
- pepper
- 2 garlic cloves
- 1/2 whole nutmeg
Heat the oil and butter in a large pan, then add a good pinch of black pepper, a pinch of salt, the peeled garlic and the chopped onion, and stir well.
When the onions start to soften add a good grating of nutmeg, the bay leaves and the beef. Stir the beef to let it brown for a few minutes.
Add the mashed up tomatoes, mix well and simmer at a low heat for about 2 1/2 hours. Taste for seasoning and add a little more fresh nutmeg, then serve.
