Ingredients

  • ciabatta
  • red onion, diced
  • tomato, diced
  • garlic clove, diced
  • red pepper, diced
  • olive oil
  • lemon juice
  • basil, chopped
  • salt
  • pepper

Method

Slice your ciabatta bread in half and drizzle over some olive oil to make it nice and crispy. Bake in the oven until the bread has toasted slightly.

Meanwhile, combine all the vegetables in a bowl, pour over some olive oil and lemon juice, season with salt and pepper. Finally sprinkle over the chopped basil.

Arrange your ciabatta on a plate and top with the bruschetta mix.
