Step 1: You will need …

  • 3 chicken breasts, chopped
  • 250 g chorizo (spicy Spanish sausage)
  • 250 g peeled prawns
  • 120 ml vegetable oil
  • 1 green pepper, chopped
  • 1 onion, chopped
  • 5 cloves of garlic, chopped
  • 620 g long grain rice
  • 1 ¼ ltr chicken stock
  • 3 spring onions, sliced
  • 400 g canned chopped tomatoes
  • 2 tbsp Tabasco
  • ½ tsp paprika
  • 1 tsp Creole seasoning
  • 1 tsp ground black pepper
  • Salt to season
  • 1 large pot with lid
  • 1 large metal spoon

Step 2: Fry the chicken

Place the large pot on a medium heat, add the oil and allow it to warm through. When warm, add the onions, green peppers, garlic, chicken and stir in well. Cook for roughly 10 minutes, stirring occasionally.

Step 3: Add the seasoning

When the chicken is cooked, stir a little and add the Creole seasoning, paprika, black pepper, Tabasco sauce and stir in once more with your spoon

Step 4: Add the rice

Add the rice and briefly stir in. Add stock, stir and bring to the boil. Once boiling, stir and reduce the heat to a simmer. Allow to simmer gently for roughly 15 minutes or until half the liquid has been absorbed.

Step 5: Add the prawns

Once absorbed, add the prawns, chorizo, chopped tomatoes, spring onions and mix well. Add 2 pinches of salt then cover and simmer for roughly 30 minutes. Remove from the heat after this time.

Step 6: Serve

Heap a generous amount of the Jambalaya onto a warmed serving plate, garnish with some sliced spring onions for that extra splash of colour and serve.

    I'm from Louisiana. This jambalaya looks like it would be rather bland...its better to cook the sausage first and use the grease to sauté the onions and bell peppers until they're brown. Also, if you can find cayenne pepper, it makes a huge difference
