Step 1: You will need

  • 3 egg yolks
  • 60 ml key lime juice
  • 560 ml condensed milk
  • 1 pie crust
  • whipped cream
  • electric mixer

Step 2: Separate The Yolks

Crack 3 eggs in half and pass the yolks between the two halves until the whites are separated. Add the 3 egg yolks to a large mixing bowl.

Step 3: Combine The Ingredients

Add 2 1/4 cups (560 ml) condensed milk to the yolks and blend together with an electric mixer (optional) on low power until incorporated. Continue by adding 1/4 cup (60 ml) key lime juice and blend until smooth.

Step 4: Pour And Bake

Pour the contents into 1 pie crust and smooth evenly. Place the pie into a 300F (150C/Gas Mark #4) oven and bake for 15 minutes.

Step 5: Chill And Serve

After 15 minutes, take the pie out of the oven and let it cool for 15 minutes, just enough to let the contents solidify. After cooling, chill the pie in the refrigerator for up to 2 hours, but no less than 1 hour. Finish by adding a ring of whipped cream around the edge. Serve chilled and enjoy!
