Ingredients
- 10 macadamia nuts
- 1 lemon grass stalk
- 1 galangal, 1 inch piece
- 1 tsp turmeric
- 1 tsp ground black pepper
- 2 tsp ground coriander
- 10 shallots
- 4 garlic cloves
- 1 tsp shrimp paste
- 6 red chillies
- 1/2 coconut milk tin
- 2 tsp sugar
- 2 tsp salt
- 4 sunflower oil
- 1 chicken breast
- 1 3 egg omelette
- fresh coriander
- 500 g rice noodles
- bean sprouts
- 1 ltr water
- white pepper
- 1 cups (250ml) prawns
Method
Start by making the spice paste. Put the shallots, peeled garlic cloves, macadamia nuts, lemon grass, peeled galangal, chillies, pepper, coriander, turmeric and shrimp paste into a blender; then blend until it is a very fine paste.
Cook the spice paste in oil for about 10 minutes, stirring now and then, until it has turned a darker colour.
Add the sugar, salt and 1 litre of water. Simmer for another 15 minutes.
Add the coconut milk, stir well and taste for seasoning. Adjust the sugar and salt to your liking and add a pinch of white pepper.
Strain the soup through a sieve, bring back to the boil, add your prawns, and cook for a couple of minutes.
Put some cooked rice noodles, cooked chicken breast, sliced omelette, bean sprouts and chopped coriander into bowls and spoon over some soup.
