How To Make Lamb Jalfrezi

You Will Need
- 450 g lamb
- 2 vegetable oil
- 1 onion
- 4 garlic cloves
- 1 green pepper
- 1 tsp garam masala
- 1 cumin seeds
- 1 cardamom pods
- 1 tsp coriander seeds
- 1 tsp chilli powder
- 2 tsp curry powder
- 2 tsp fresh ginger, chopped
- 1 tin chopped tomatoes
- 1 fresh coriander
- 100 ml water
Method
Put the cumin seeds and cardamom pods into a hot, dry pan to toast gently and release their aroma. Add the oil (or ghee) and onions and let them cook for a moment before adding the garlic and green pepper, and mixing everything together.
Next, stir in the garam masala, coriander seeds, curry powder, ginger and the lamb. Stir all of this together let the lamb brown slightly. Add the tinned tomatoes, some of the fresh coriander and a little bit of water.
Simmer for 35-45 minutes, or until the lamb is tender. Serve with a fresh coriander garnish.
