How To Make Latkes

Step 1: You will need …..
- 500 g potatoes, peeled
- 1 medium onion, peeled
- 1 egg
- 1 egg yolk
- 4 tbsp all purpose flour
- 1 tsp baking powder
- 100 ml vegetable oil for frying
- salt and pepper
- 1 box grater
- 2 bowls
- 1 sieve
- 1 spoon
- 1 spatula
- 1 frying pan
- 1 tray lined with paper towel
Step 2: Grate the potatoes and onion
Begin by grating your potatoes, into a bowl, using the large holes on your box grater, being very careful not to grate your knuckles. Then grate the onion into the bowl in exactly the same way.
Step 3: Squeeze out excess liquid
Now transfer the grated vegetables into a sieve and with a bowl placed below, squeeze out all the excess liquid from the vegetables using your hands. Discard the water, before placing them back to the bowl.
Step 4: Mix in the other ingredients
Next, add the eggs, flour, baking powder and salt and pepper into the bowl of grated vegetables and combine well.
Step 5: Fry
Placing the frying pan onto a medium heat, add some oil and allow it to warm through. When warm, add a spoonful of the latke mixture. Using the back of your spoon, flatten it out into a disk shape. Repeat with the remaining mixture. Allow the cakes to brown on both sides then remove with your spatula. Transfer onto a plate lined with kitchen paper, to drain. Repeat with the remaining mix.
Step 6: Serve
Your delicious, savoury potato and onion pancakes are ready to serve as a snack or tasty side dish! Top with crème fraiche, caviar, smoked salmon or even dust it with some sugar.

I know a recipe exactly like this one but with rice instead of potatoes and white cheese instead of onion. Yummy! Try it also ;)
