Step 1: You will need...

  • 4 large tomatoes
  • 250 g of day old continental-style bread, cut into chunks
  • 1 small bunch fresh oregano, rinsed, dried and roughly chopped
  • 1 small bunch flat-leaved parsley, rinsed, dried and roughly chopped
  • 1 clove of garlic, finely chopped
  • 50 ml olive oil
  • the zest of 1 lemon
  • 3 tbsp grated parmesan
  • the juice of half a lemon
  • salt and pepper
  • 1 chopping board
  • 2 knives, one large, one small
  • kitchen paper
  • 1 dessert spoon
  • 1 electric blender
  • 1 spatula
  • 1 shallow oven-proof baking dish, big enough to hold the tomatoes

Step 2: Preheat the oven

Preheat the oven to 190ºC (375ºF/ gas mark 5).

Step 3: Prepare the tomatoes

Remove the stalks of each tomato then chop off the ends. Now using a spoon, scoop out the pulpy centres of the tomatoes and generously season the insides with salt. Place the tomatoes upside-down on kitchen paper to drain.

Step 4: Blend the bread

Put the bread into the bowl of the blender, pressing it down slightly and blend into coarse crumbs.

Step 5: Blend the herbs, garlic and lemon zest

Add to the bread crumbs the chopped oregano ,chopped parsley, garlic, lemon zest and season with salt and pepper. Blend the ingredients together thoroughly for about a minute and then transfer them into a bowl.

Step 6: Mix in the remaining ingredients

Add to the bread crumb mixture the olive oil, lemon juice and parmesan and then using a spatula, mix the ingredients together well.

Step 7: Grease the baking dish

Dip a piece of kitchen paper into some oil and rub it around the baking dish to give a light coating.

Step 8: Stuff the tomatoes

Take each tomato and fill with 3 to 4 spoonfuls of the bread crumb mixture, then place the tomatoes in the baking dish.

Step 9: Bake the tomatoes

Place the dish in the centre of the oven and bake for approximately 30 minutes.

Step 10: Remove from the oven

When the bread crumb mixture is golden brown, remove the tomatoes from the oven.

Step 11: Serve

Serve at room temperature as a starter or part of a buffet.
